The first vintage of Old Block Shiraz in 1980 and its resulting success accelerated a shift of focus towards the premium wines St Hallett has become renowned for ever since.
St Hallett understands the importance of saving the old vines and focusing on the key varieties for the Barossa region – particularly Shiraz.
Strong long-term relationships with focussed and passionate growers give St Hallett access to the Barossa’s most prized vineyards, with some dating back over 100 years. Over time, St Hallett has built up a deep understanding of the rich tapestry of sites and climates in the Barossa and with it an appreciation of both dedicated growers and quality vines.
An unrivalled dedication to preserving the integrity of these individual parcels of fruit has always been the St Hallett philosophy. By tailoring fermentation and maturation to each parcel, we reveal the rich textures, depth and diversity of Barossa wine.
The Barossa consists of two distinct regions, Barossa Valley and Eden Valley. These two Valleys provide our team with a wonderful tapestry of vineyards to create great wine.

The hallmark of Toby’s winemaking is his considered and thoughtful approach, coupled with a genuine passion for innovation.
Toby brings a fresh, inquisitive approach and a diverse range of winemaking experience both from a regional and varietal perspective having worked in wineries around the world.
正规的体育投注appThe old vines of Barossa, St Hallett’s focus on Shiraz and Riesling, and the interplay between the two valleys – Barossa and Eden – provide him with plenty of intriguing opportunities and interesting challenges.
Having grown up in Sydney and travelled the world, Toby spent six months setting up a vineyard in the Strathbogie Ranges, Central Victoria. After completing a vintage Toby was accepted into the Post-Graduate Oenology course at Adelaide University.
His first few years in wine reflected an avid exploration of the winemaking and viticultural challenges presented by climatic diversity, working from cool climate regions of New Zealand & Oregon to continental northern Rhone Valley & Central Victoria to the heat of the Hunter Valley.
Toby’s general joie de vivre stimulates his continual exploration of all worldly things, naturally including winemaking within the unique tapestry of the Barossa.
His motto is ‘Happiness is the journey, not the destination”. When not talking all things wine, he can be found discussing philosophical theories, current affairs or kicking a soccer ball around the St Hallett lawns.
